Vinícius Jr also enjoyed a memorable evening, getting back on the scoresheet and contributing to Madrid's attacking turnaround.
The Brazilian's goal came after another impressive piece of combination play involving Bellingham, who provided two assists during the match.
After a difficult first half, Madrid's attack became much more dangerous after the interval, with Mbappé and Vinícius causing significant problems for the visitors.
Perfect Bernabéu Return for Mourinho
The victory also gave Mourinho the perfect homecoming.
The Portuguese manager was back on the Real Madrid bench at the Santiago Bernabéu for the first time in more than 13 years.
His return was initially made uncomfortable as Madrid struggled to find rhythm and were booed by sections of the home crowd before halftime.
Mourinho's side responded strongly after the break, producing the attacking display required to turn the atmosphere around.
Real Madrid now have six points from their opening two league matches, putting them at the top of the early La Liga table.
With Mbappé already in devastating form and Vinícius back among the goals, Mourinho could hardly have asked for a better first night back at the Bernabéu.
